Crawfish Haven USA, a Cajun and Creole restaurant, will open in mid-March across South Jefferson Street from the Columbia County Health Unit.
Dean and Casie Hayes and their son, Haven Hayes, have purchased the building at 376 S. Jefferson. Haven Hayes will operate the restaurant. A drive through has been constructed.
Casie Hayes said her husband is a fourth-generation fisherman.
“We live in Breaux Bridge, Louisiana, the Crawfish Capital of the World. We own the ponds that the crawfish are caught in. While this will be our first business adventure in the restaurant industry we are very familiar and comfortable boiling crawfish. We have been raised around crawfish and have boiled crawfish our entire lives. We are Cajuns through and through,” she said.
A Thursday, March 11 opening is planned. Crawfish Haven USA promises “hot boiled Louisiana crawfish, boiled shrimp, corn, potatoes, hot boudin links and hot crawfish boudin links.”
Hours will be 2 p.m. to 9 p.m.
